Potato Candy

One SMALL potato.
2 to 3 pounds of powdered sugar.
One small jar of creamy peanut butter.

Peel and boil the potato and when it cools mash it in a bowl with a fork. Add some powdered sugar while stirring. It will turn liquid. Keep adding powdered sugar and mixing until it reaches a pie-dough consistency.

Sprinkle powdered sugar on the countertop and roll the dough out into an oblong shape about 1/8" thick. Spread peanut butter on the dough and roll the whole thing up tightly, starting with a long side of the oblong.

Cut into ¼" pieces using sawing motions with a sharp, serrated knife. Lay the pieces on cookie cooling racks to dry for an hour or two. They will stiffen up a little and be easier to handle.
